STRAWBERRY SPINACH SALAD
2 oz. green onions, sliced
3 oz. fresh salad spinach
3 oz. cucumber, sliced
¾ c. strawberries, quartered
4 oz. chicken breast, cooked and chopped
Dressing:
1 tsp. lemon juice
2 tsp. apple cider vinegar
2 pkgs. sweetener
2 tsp. canola oil
¼ tsp. poppy seeds

Mix together salad ingredients. Mix together dressing and drizzle over salad; toss lightly and serve. |

STUFFED PEPPERS
1 lb. ground round or turkey
½ cup chopped green onions
½ tsp. each: garlic powder; pepper
2 small green peppers
1 pkg. cream of tomato supplement
1 cup water
½ cup bean sprouts, optional |

Combine meat, 1 tbsp. green onions, garlic powder and pepper. Sauté in skillet. Drain. Cut peppers in half, remove seeds and fill with meat mixture. Place in skillet, mix supplement with water, add remaining green onions and pour over peppers. Cover and simmer for 25 minutes. |

CRAB CAKE
4 oz. lump crab meat
½ egg white
1 Tbsp. MRC mayo
¾ tsp. Old Bay seasoning
pinch of black pepper
¼ Tbsp. fresh parsley, chopped
¼ tsp. Dijonnaise
4 melba rounds, crushed
2 oz. celery, finely chopped
To taste: chili powder, onion powder, and garlic powder
¼ cup diced tomatoes ** |

Mix egg white and crab meat lightly with fork. Add mayo, Old Bay,
pepper, parsley, Dijonnaise, celery and crushed melba. Mix gently,leaving crab lumps as large as possible. Using hands, form one patty. Spray Pam in non-stick skillet; brown patty on each side, 5-7 min. |

In a coated skillet, brown meat and drain. Add peppers and onion and sauté. Add remaining ingredients, except tomatoes, and simmer for 15 minutes. Add tomatoes just before serving. |

SPINACH ARTICHOKE CASSEROLE
2 oz. frozen spinach, thawed and drained
2 oz. frozen artichokes, thawed and drained
2 oz. romano cheese, shredded

1 pkg. MRC Cream of Chicken Soup
¼ cup water

| Preheat oven to 350 degrees. Place all ingredients in a small baking dish, sprinkle with chicken bouillon. Cover tightly and bake 20 minutes. |

ROASTED ASPARAGUS
8 oz. fresh asparagus, washed and ends snapped
2 tsp. olive oil
1 tsp. minced garlic
sea salt and ground black pepper, to taste
1 tsp. chopped fresh rosemary

| Preheat oven to 400 F. Toss asparagus in olive oil, rosemary and garlic. Arrange asparagus in single layer in a roasting pan. Sprinkle sea salt and pepper. Place in oven and roast for 10 minutes or unitl tender. After roasting weigh a 4 oz. serving. |

CHEESY MUSHROOMS
2 oz. Swiss cheese, shredded
8 fresh whole mushrooms
1 pkg. chicken bouillon supplement, dry
Preheat oven to 400 degrees. Clean mushrooms and separate stems. Chop stems and mix with shredded cheese. Place mixture in caps and sprinkle with dry chicken bouillon and add a few drops of water. Spray lightly with Butter Flavor Pam and bake 5-10 minutes.

AMAZING CHEESECAKE
2 cups low-fat cottage cheese (1% milkfat)
1 pkg. vanilla shake supplement
1 pkg. lemon supplement
2 pkgs. artificial sweetener
¼ tsp. cinnamon
Dash of nutmeg
1 pkg. Knox unflavored gelatin
¼ cup hot water
2 Tbsp lemon juice
Crust:
1 cup Melba toast
2 tsp. safflower oil
2 pkgs. artificial sweetener |

Mix in blender and press in pie pan. Chill while mixing cake. Mix gelatin with hot water in blender on high. Add remaining ingredients and pour in crust. Chill before serving. |

CHOCOLATE MOCHA MOUSSE
4 pkgs. chocolate shake supplement
2 cups low-fat cottage cheese (1% milkfat)
2 cups water
4 tsp. instant coffee, decaffeinated
2 pkgs. unflavored gelatin, dissolved in ½ cup water
8 pkgs. artificial sweetener
3 tbsp. vanilla extract
1 pkg. frozen unsweetened raspberries |

Mix all ingredients, except berries, in blender until smooth. Fold in berries. Chill. |

Crust:
1 cup Melba toast
2 tsp. safflower oil
2 pkgs. artificial sweetener
Mix all ingredients for crust in blender. Press into bottom of 9 x 13 (or 8 x 8 for a thicker crust). Pour mousse on top and serve. |
