
Quiche Lorraine
Quiche Lorraine is a dish with roots that go all the way back to the 1500s! It's no wonder a dish this delicious has stood the test of time. In fact, it even has its own National food holiday (it's May 20th of each year - look it up!). We can understand why a dish this delicious remains so popular. What could possibly be wrong with got eggs + milk + bacon? Add to that a handlful of crips scallions and mild, nutty swiss cheese and bake it to perfection in a warm oven - we're seeing stars!
Quiches are oftentimes made with a shell or crust. To keep ours weight loss friendly, we've discarded the crust and swapped regular milk for unsweetened almond milk. With a dash of pepper and nutmeg, you've got enough flavor to not even notice that carbohydrate heavy crust is gone! We love this recipe because it makes enough to feed 6 people (or feed yourself 6 times - we won't judge!). With one bowl and one pan, your time fussing around in the kitchen is minimal and cleanup is a breeze!
Leftovers can be stored in the fridge in an airtight container for 3-4 days. Reheating is simple and can be done in a microwave (fastest) or air fryer (closest to "freshly baked").
Ingredients:
- 9 slices of crispy bacon
- 6 green onions
- 6-9 large eggs*
- 1 1/2 C. unsweetened almond milk
- 6-9 oz. Swiss cheese*
- Dash each of: salt, ground black pepper, nutmeg
*MRC Clients: refer to your MRC menu for exact protein portion sizes. This recipe uses 3 servings of eggs and 3 servings of hard cheese.
Instructions:
- Preheat oven to 375 degrees F. Coat a large pie pan or 2 quart casserole dish with cooking spray and set aside. Crumble the bacon, dice the green onions, and shred or dice into small cubes the Swiss cheese.
- In a medium bowl, whisk the eggs witht the almond milk. Add the crumbled bacon, diced green onions, cheese, and spices. Pour into the dish and bake for 40-45 minutes until browned and mostly set (a little bit of jiggle in the very center is OK). Let cool for 5 minutes, slice into 6 pieces, and serve warm.
