Pumpkin Cocoa Drop Cookies

Ingredients:

  •  1 packet MRC Creamy Hot Cocoa HNS  
  •  1 tsp. Olive Oil  
  •  1 packet non-sugar sweetener  
  •  1 TBSP water  
  •  1-2 dashes of pumpkin pie spice

 Instructions: Preheat oven or toaster oven to 350 degrees F and line a sheet pan with parchment paper. Mix all ingredients in a small bowl just until combined. Using a spoon, drop a small amount of mixture (1-1.5 inches in diameter) onto the sheet pan, spacing cookies 1 inch apart. Bake for 1-2 minutes, just until an outer shell has formed and crisped. 

 Makes 1 Serving | Serving Size: 1 batch of cookies | One Serving Replaces: 1 HNS, 1/3 healthy fat serving

The help and service here is above and beyond. I’ve wanted to lose weight but can’t take a lot of supplements because of heart issues and diabetes. Gina showed me how to use food to accomplish my goal and always has excellent simple recipe ideas. I had to increase my protein also and the high nutrient supplements they have which are very helpful in increasing my protein. I like that the weigh ins hold me accountable and give me time to ask questions or go over any concerns. I’ve lost 20 pounds and look forward to losing more. Most importantly, my A1C has dropped and I am feeling better! Very caring place and they are in it with you. Love the cooking classes and the positive reinforcement boards.
