Tacos are always a family favorite, they are super easy to make, and everyone can assemble their own. We used shrimp today, but grilled fish or chicke would also be perfect. This recipe is very versatile, feel free to use your favorite vegetable, for those who like more crunch try using shredded cabbage instead of lettuce, or try lightly sauteed red and green bell peppers for a real punch of flavor.
- 4 oz.shrimp, peeled
- 50 calorie tortilla, 1
- 2 tbsp. Walden Farms Chipotle Ranch (see below)
- 2 oz. avocado, sliced
- 1 oz. lettuce/tomato or shredded cabbage
- Mrs. Dash Southwest Chipotle Seasoning
- 7 oz. raw cauliflower
- Pam cooking spray
Spray skillet with Pam, season shrimp with Mrs. Dash seasoning, sauté shrimp until light pink, turn down the heat and add in Walden Farms Chipotle ranch and stir. Place your shredded lettuce or cabbage, tomato, shrimp, and avocado on your tortilla and enjoy!
Chipotle Cauliflower Rice
Place 7oz of raw cauliflower in a food processor, ricer, blender, or use cheese grater to "shred" cauliflower. You want the cauliflower to be minced to rice-like consistency. Place minced cauliflower in a tupperware container and microwave for 6 minutes. Spray skillet with Pam, place cooked cauliflower in skillet and and season with Mrs. Dash Seasoning. Stir occasionally and let simmer for 5-7 minutes. Enjoy!
