Ancient Kitchen Staple Still Works Today

The key to vinegar's health-promoting properties lies in its high concentration of acetic acid, and not beneficial properties of the culinary condiment. The “mother” in apple cider vinegar is a unique mix of bacteria, yeast and cellulose that forms during fermentation, but the mother does not perform specific weight loss functions. Moreover, acetic acid’s role as a supplement for slowing digestive processes is marginal when compared to the latest compounded weight loss medications. Dietary vinegar does, however, contain nutrients and antioxidants.

Dietary vinegar has graced kitchens for thousands of years, serving as a beloved preservative, a functional food and an important cleaning agent. This fermented liquid contains far more than just its signature tangy flavor. Vinegar is packed with essential nutrients, bioactive compounds, and health-promoting properties that have made it a cornerstone of traditional medicine across cultures.

What makes vinegar so remarkable isn't just its unique taste, but its impressive nutritional profile. Through the fermentation process, vinegar develops a rich concentration of amino acids, vitamins, minerals, and organic acids that work synergistically to support various bodily functions. These nutrients help regulate cellular metabolism, boost immune function, and provide antioxidant protection.

The key to vinegar's health benefits lies in acetic acid, the compound formed during fermentation. This means that whether you choose apple cider vinegar, balsamic, or white vinegar, you're getting similar metabolic and blood sugar management benefits from the acetic acid content. But, not all dietary vinegars are created equal when it comes to nutritional value, as darker varieties may pack more antioxidant punch than their lighter counterparts.

BMJ Group Retracts Previous ACV Study

In March 2024, a clinical trial published in BMJ Nutrition, Prevention & Health journal made headlines with bold claims about apple cider vinegar (ACV) and weight loss. The study suggested that drinking small amounts of ACV daily could help overweight and obese individuals shed pounds. The news quickly captured international media attention and went viral across social media. The celebration, however, was short-lived. Independent experts almost immediately identified multiple red flags, raising serious questions about the credibility of the findings.

A study suggesting apple cider vinegar helps with weight loss has been retracted by BMJ Group, as of September 2025, after experts uncovered major flaws in its data and methodology. BMJ Group advises journalist and others to stop referencing a study that once suggested drinking small amounts of apple cider vinegar each day could support weight loss in people who are overweight or obese.

Dr. Helen Macdonald - Ethics & Content Editor at BMJ Group

The statisticians found questionable statistical methods, unreliable data, and implausible results. Ultimately, they could not replicate the study's results due to numerous analytical errors. Perhaps most troublingly, the trial had not been properly registered beforehand. Faced with these fundamental flaws, the journal officially retracted the paper in September of this year. Despite the hype around the flawed study, apple cider vinegar isn't snake oil. The truth lies somewhere between a miracle cure and a complete myth.

What the "mother" is and what it’s not...

Nutrition experts may recommend raw, unfiltered apple cider vinegar simply because it's less processed and the high heat used in pasteurization can destroy some beneficial bacteria and enzymes that the mother contains. The mother is safe for most people to consume, and it can be used as a starter to make more vinegar or added to other foods for extra flavor and potential health benefits. Plus, the stringy mass of cellulose and bacteria can act as a starter for a new batch of dietary vinegar from an alcohol-containing liquid like cider or wine.

While social media influencers often claim that the mother in apple cider vinegar has special "detoxing" powers, scientific evidence doesn't support these dramatic assertions. Recent retractions of studies that initially suggested the mother had unique weight loss properties serve as a reminder to approach sensational health claims with skepticism. The body already has an effective detoxification system through the liver and kidneys, and there's no evidence that the mother enhances this natural process.

Health Benefits of Dietary Vinegar

Many people find that adding a tablespoon of diluted vinegar to their routine supports their digestive health, often reporting less bloating and improved overall digestion. While the scientific evidence is still developing, the combination of traditional use and emerging research makes dietary vinegar an interesting addition to consider for digestive wellness. With improved stomach acidity, dietary vinegars also helps your body absorb essential minerals like calcium and iron more efficiently.

  • Blood Sugar Control: Clinical studies have even shown that for individuals with type 2 diabetes, taking a small amount of vinegar (about one or two tablespoons diluted with water) at bedtime can help lower fasting blood glucose levels the next morning for better blood sugar control.
  • Weight Control: The growing interest in vinegar for weight management isn't just a social media trend. The science behind consuming dietary vinegar in small quantities is to slow gastric emptying into the digestive tract, which reduces appetite and makes it easier to consume less food.
  • Antioxidant Effects: The fermentation process that creates dietary vinegars like balsamic, rice wine or apple cider vinegar produces additional health benefits. Polyphenols are plant-based antioxidants that provide a balanced gut to help with nutrient absorption and metabolic benefits.
  • Heart Health: Emerging research suggests that dietary vinegar, especially apple cider and balsamic varieties, could offer significant benefits for cardiovascular health. Both the active ingredient of acetic acid and a variety of antioxidants play a key role in boosting heart health.
  • Digestive Health: Modern research is now catching up with ancient wisdom, particularly when it comes to vinegar's impressive effects on digestive health and enhanced gastric function for digestive health through better nutrient absorption and overall blood sugar regulation.

One of vinegar's most remarkable qualities is its incredible shelf life. You may notice some cloudiness or sediment formation over time, particularly in unfiltered varieties like apple cider vinegar, but this is perfectly normal and safe. Remember, dietary vinegar isn't a miracle cure, but it is a flavorful, nutritious addition that can support your metabolic and cellular health. Whether you're using artisanal balsamic aged in wooden barrels or simple white vinegar, view it as a healthy addition to a balanced lifestyle rather than a cure-all solution.

Vinegar, which literally means "sour wine,” was likely discovered by accident when alcoholic beverages accidentally fermented for too long. Once documented by the ancient Babylonians, its usefulness as a food preservative and cleaning agent quickly spread across ancient civilizations. Today, darker vinegars that are generally less refined tend to retain more antioxidants to combat cellular damage.
