
Zucchini Tots
Looking for the perfect bite-size appetizer recipe for an upcoming party? Maybe you just want a delicious replacement for those greasy tater tots? Well, look no further because Zucchini Tots are here! This yummy recipe was submitted by Dan L. for our MRC Chef Sensation: Recipe Contest. The MRC judges loved it so much it was one of the four finalists in the competition. Crispy and delicious this is sure to hit the spot for any tater tot lover! This is also a great kid-friendly option to get any picky eater to eat their vegetables.
Ingredients:
- 8 oz shredded zucchini
- 1 egg
- 3 oz cheddar cheese, shredded
- 100 calories of Saltines, Melba Rounds, or plain or garlic flavored crackers; crushed
- Salt and Pepper, to taste
Instructions:
- Preheat oven to 400 degrees.
- Shred zucchini and place in cheesecloth or paper towel and wring out excess moisture.
- In a medium mixing bowl combine all ingredients until well mixed.
- Make 8 small rounded “patties” out of mixture and place on lined baking sheet.
- Bake for 9 minutes, flip each patty and bake for another 9 minutes. Enjoy!
