
Zesty Avocado & Tomato Salad
This right here is not your average salad – and in this case, it’s a good thing! Sure it’s green and has tomatoes and cucumbers, but that’s about where the similarities between this salad and your traditional salad stop. Instead of lettuce and dressing, we’ve added some colorful and zesty avocado, cilantro, lime juice, and olive oil – creating a unique blend of creamy and citrus unlike anything you’ve tasted before!
This quick side dish is perfect for the summertime (think beach trips or poolside parties), but can be enjoyed all year long, too. All these ingredients are best FRESH! So take a trip to your local farmer’s market and find the varieties that look most appetizing to you. With three servings per batch, there’s enough for the whole family!
Ingredients:
- 14 oz. Roma Tomatoes
- 8 oz. English Cucumber
- 2 oz. Green Onion
- 3 oz. Avocado
- ¼ C. Cilantro*
- 1 ½ Tbsp. Extra-virgin Olive Oil
- Juice of 1 medium Lemon (about 2 Tbsp.)
- 1 tsp. Sea Salt
- 1/8 tsp. Black Pepper
*Note: if you aren’t keen on cilantro, fresh dill makes for a good substitute
Directions:
- Dice: tomatoes, cucumbers, green onion, avocado, and cilantro.
- Place all in a large salad bowl.
- Drizzle with olive oil and lemon juice.
- Toss gently to combine.
- Just prior to serving, toss with sea salt and black pepper
Servings: 3. Replaces: 1 vegetable, 1 healthy fat.
Alternate recipe: Make this salad a "complete" meal by adding 4 oz.* of your favorite protein (pictured: grilled chicken) and serving over an "oven-fried" low-calorie tortilla!
*note: increase protein portion as dictated by your menu.
