Cauliflower Mashed 'Potatoes'

In the mood for more of a sauce? Just thin out this recipe to your desired consistency and top your favorite grilled meats!

 

Ingredients:

  • 1 large head cauliflower, chopped small
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 2 cloves garlic, minced
  • 1 ½ Tbsp grass-fed organic butter, melted
  • 8 oz low sodium chicken broth

Instructions:

  1. Chop one large head of cauliflower into bite-sized pieces.
  2. Steam in a double-boiler or a pan with ½ inch of water that is covered with a lid.
  3. When tender, add cauliflower to a food processor and pulse until fine.
  4. Add salt, pepper, minced garlic, butter and chicken broth.
  5. Blend until smooth.
  6. Add more broth until desired consistency; thicker for mashed and thinner for sauce.
  7. Transfer mixture to a large frying pan.
  8. Cook on medium heat until warm throughout.
  9. Serve as a side or as a sauce on top of your favorite grilled meats. Enjoy!

I am glad I decided to go to MRC. I've lost 35 pounds total since the end of February 2024. In that time my blood pressure is now within normal limits. In addition I'm in remission for IgA Nephropathy which damages the kidneys. Even though I cannot eat as much protein due to kidney issues, I've been able to find a balance with my diet. I'm grateful for Jamie whom I meet with every Saturday to do my weigh in. She is such a sweet lady. Thank you for your guidance.
