Pepperoni & Mushroom Cauliflower Pizza

Low Carb Pepperoni Pizza on Cauliflower CrustThink that eating healthy means no more weekly pizza night?  Not anymore!  Thanks to our good friend cauliflower we have whipped up a delicious Pepperoni and Mushroom Pizza.  Yes! On our Meat Lovers Delight Menu you can enjoy Pepperoni and even another classic pizza topping, olives!  When making Cauliflower Crust Pizza we highly recommend using a pizza stone it really does make a difference in how crispy your crust is.  You don't even need to go our and buy an fancy pizza stone, we picked ours up at Big Lots for only $12!  Also, make sure to really squeeze your cauliflower through a cheese cloth or dish towel to remove excess water.  I usually will get at least 1/2 cup of excess water out of my cauliflower in this step!  Plan your next pizza night and enjoy our recipe for Pepperoni & Mushroom Pizza on a Cauliflower Crust!

Pomi Pizza Sauce

In our recipe we use Pomi Pizza Sauce because this particular brand only uses tomatoes and spices.  It is important not to use just any store bought pizza sauce because others contain extra sugars.

 

 

Pepperoni & Mushroom Cauliflower Pizza

For cauliflower crust:

  • 12oz cauliflower, grated (1/2 large head)
  • 1 medium egg
  • 2 oz mozzarella cheese, shredded
  • 2 oz parmesan cheese, shredded
  • 1/4 tsp. driedoregano
  • 1/4 tsp dried basil
  • 1/4 tsp garlic powder

Toppings:

  • 2 oz. pepperoni
  • 1/4 c. Pomi© Pizza Sauce
  • 2 oz. mushrooms, sliced
  • 2 oz mozzarella cheese, shredded 

 

Directions:

With your pizza stone in the oven, or baking sheet if you don't have a stone, preheat oven to 400F.  Grate 12 oz cauliflower using a box grater or place cauliflower in food processor and pulse until the size of rice. In a covered microwaveable bowl, cook cauliflower for about 4-5 minutes until soft. Remove and let it cool. Once cooled squeeze out excess moisture with a cheese cloth or dish towel, remove as much moisture as possible.  Return cauliflwoer to bowl and mix in the egg, cheese and seasonings. On a cutting board place a large sheet of parchment paper, spray with cooking spray.  Place your cauliflower"dough" onto parchment paper and form about a 10 inch round crust.  Make sure to pat it down so it's not too thick or else the crust will be soggy.  Use cutting board to slide your crust and parchment paper onto preheat pizza stone.  Bake for 15-20 minutes or until the crust is golden brown across the entire surface.  Use the parchment paper to slide your golden brown crust back onto your cutting board and remove from oven.  Cover the surface of your crust with a THIN layer of Pomi Pizza Sauce, remember you don't want your pizza to be too heavy for the crust.  Add an even layer of mushrooms, pepperoni and top with cheese.   Bake for another 10-12 minutes or until cheese is bubbly. Cut pizza into 4 even slices.

Servings: 2
Serving Size: 2 slices (1/2 of pizza)

Replaces: 8 oz vegetables, 3 oz. cheese, 1 healthy fat
