Zesty Nachos

On average, one plate of nachos can pack as many as 600 calories and 38 grams of fat. What's a gal to do when her goal is weight loss, but she's craving crunch and flavor? Call the MRC Kitchen and have them drum up a healthy nacho plate that won't sabotage your weight loss goals! Introducing our Zesty Nachos! They're lower in calories and fat than traditional natchos and are packed with hunger-fighting protein! So, your nacho plate will feel like a meal instead of just an appetizer! The best part? We haven't skimped on any of your favorite nacho toppings! We've got guacamole, ground meat, cheese, and even a clever and delicious sour cream swap!

With just seven easy ingredients and a little bit of prep, you'll be ready to get your crunch on and dig into a mouth-watering meal that you can feel good about eating! As far as veggies on Nachos go, we know there are vastly different preferences. So, we're leaving it up to you as far as what you want to put on your nachos. But if you're looking for some suggestions, we recommend shredded lettuce, diced tomatoes, sliced green onion, and diced jalapeno (for a spicy kick). We suggest doing at least 4 oz. of vegetables, but you can do up to 8 oz. if you really like your veggies with your nachos!

Ingredients:

  • 2 1/2 oz. ground turkey
  • 2 tsp. Low-sodium Taco Seasoning
  • 1/2 oz. plain, nonfat Greek yogurt
  • 2 oz. avocado, mashed
  • 1/2 oz. cheddar cheese, shredded
  • 1 packet MRC Zesty Nacho Crisps
  • Lime
  • 4-8 oz. raw vegetables, diced and sliced
  • Optional: minced garlic and cilantro

Instructions:

  1. In a skillet over medium heat, cook ground meat. Drain any grease, return to the heat and mix in taco seasoning and 2-3 TBSP water. Cover and let simmer on low for another 5-10 minutes or until the water has mostly evaporated.
  2. While turkey is cooking, prepare the guacamole by combing in a small bowl the mashed avocado, lime juice, garlic, and cilantro. Cover with plastic wrap and set aside.
  3. Dice and shred your veggies.
  4. On a plate, open and layer the MRC Zesty Nachos packet. Next, layer on the cook meat. Then, layer on your vegetables. Top with cheese, guacamole, and greek yogurt. Garnish with cilantro if desired.
