These garlic butter seared scallops are easy and so quick to prepare, we are talking in under 10 minutes! With the simplicity of this recipe, it’s perfect to make as a dinner for one, a dinner for your family, or to wow your guests!

There are so many ways to prepare scallops- You can bake them, you can broil them, you can even wrap ‘em up with Bacon! But for this recipe, we cooked the scallops in a pan on the stove top in a combination of Kerry Gold butter and canola oil to achieve the perfect sear!

Not only is the recipe delicious, but it is also nutritious! Scallops are low in sodium and saturated fats and are made up of more than 80% protein! They are also an excellent source of calcium and Vitamin B12 along with iron, magnesium, zinc and iron.

When shopping for your scallops you will find two different types, sea & bay. The name says it all! Sea scallops are slightly bigger and from the sea, while bay scallops are smaller and from, well, you get it. We used sea scallops in this recipe, but the same ingredients and directions can be used for bay.

 

Ingredients:

  • 12 oz Scallops
  • 2 cloves Garlic, minced
  • 1 tbsp Canola oil
  • 2 tbsp Kerry Gold butter
  • Sea salt, Pepper, Chili Powder (to taste)

 

Directions:

Lay your scallops on a paper towel and cover with an additional paper towel and let sit at room temperature for about 10 minutes to absorb excess moisture.

Season your scallops with sea salt, pepper, and chili powder.

Put 1 tbsp of canola oil in a fry pan on the stop top.

Heat oil to high heat, once heated add minced garlic, lower down to medium-high heat.

Using tongs, place scallops in pan, sear for two minutes.

*Here is the fun part*

Flip the scallops, add 2 tbsp of Kerry Gold butter,

Once butter is melted, hold the handle of the pan tilting it towards you so that the melted butter falls to the bottom. Use a spoon to spoon the butter back over the scallops several times coating evenly to give the scallops that golden color. This all should be done in about 1 ½ minutes.

Remove scallops from pan, and serve!

 

Servings: 3

Serving size: 4 oz scallops

Replaces: 4 oz protein serving, 1 healthy fat serving
