Today the MRC kitchen is bringing you foil packs- four ways! Chicken Fajita, Creole Chicken, Italian Chicken & Chicken Teriyaki! With this recipe, you will be using the same protein and vegetables in the individual packs but with simple variations in the seasonings to change up the flavor with each meal! Talk about an easy weekly meal prep!

Meal prepping is one of the best tools you can use when it comes to weight loss. The better prepared we are, the less room for temptation! But one of the more common downsides of meal prepping, aside from time, is getting tired of eating the same meal over and over. It seems that by the third time around, that Tupperware container just stops looking as appetizing as it once did. So this got us thinking... What if we could come up with an efficient way to prep different meals for the week without having to buy all different ingredients? These foil packs are just that- They are simple, cost-efficient, and tasty!

The first step is choosing your protein. We used boneless, skinless chicken breast for our foil packs, but you can choose to incorporate options like steak or shrimp or even enjoy a surf & turf with a little bit of both! Next is deciding on your vegetables! Our veggie medley consists of broccoli, zucchini, & peppers, but again this recipe is versatile, you can easily swap out any other on-plan veggies that you prefer!

Have a favorite of the packs? Because you are using the same ingredients, aside from the seasonings, you can choose to make four of the same one. Or, you could double up on one or two of the packs! You can even multiply this entire recipe by two to make eight meals for the week! This is sure to be one of your new favorite rotations in your kitchen!

To make things simple, we want to give you your shopping list for what you will need for all four packs!

Shopping list:

  • 1.25 lbs. boneless, skinless chicken breast
  • 2 peppers, (red, green, yellow)
  • 2 medium zucchinis
  • 1 small head broccoli
  • 1 bag frozen plain riced cauliflower
  • 1 clove garlic
  • 4 12-inch pieces of aluminum foil 
  • Seasonings: salt, pepper, chili powder, cumin, cayenne pepper, garlic powder, onion powder, oregano, basil, thyme, paprika, braggs liquid aminos, red wine vinegar, ground ginger, 1 orange HNS, & a sweetener of your choice

Pack # 1 Chicken Fajita

  • 5 oz- raw boneless, skinless chicken breast, sliced
  • 4 oz- peppers and Zucchini
  • 2 oz- cooked cauliflower rice, frozen bag
  • 1 tbsp- olive oil
  • 1 tsp chili powder
  • 1/2 tsp- garlic powder
  • ¼ tsp- paprika, onion powder, & sweetener of choice like Stevia or Splenda.
  • 1/8 tsp- cayenne pepper, cumin, Salt

 

 

Pack # 2 Creole Chicken

  • 5 oz- raw boneless, skinless chicken breast, sliced
  • 4 oz- peppers, zucchini, broccoli
  • 1 tbsp- Olive oil
  • 1 tbsp paprika
  • 1 tsp- onion powder, oregano, & basil, chopped garlic or garlic powder
  • ½ tsp- thyme, salt, black pepper, cayenne pepper

 

Pack # 3 Italian Chicken

  • 5 oz- raw boneless, skinless chicken breast, sliced
  • 4 oz- peppers, zucchini, broccoli
  • 1 tbsp- Olive oil
  • 1 tsp- oregano, thyme, garlic powder, paprika
  • ½ tsp basil, rosemary, onion powder, salt
  • Pepper to taste

 

Pack # 4 Chicken Teriyaki

  • 5 oz- raw boneless, skinless chicken breast, sliced
  • 4 oz- peppers, zucchini, broccoli
  • 2 tbsp- Braggs liquid aminos
  • ¼ pkg- Orange Hugh Nutrient supplement (HNS)
  • 1 tbsp- Olive oil
  • 2 tsp- chopped garlic
  • ¼ tsp- ground ginger
  • 1/8 tsp pepper

Instructions:

  1. Slice chicken breast into strips
  2. Slice/Chop your peppers, zucchini, and broccoli, or any other vegetable you are incorporating!
  3. Weigh out your individual portions for each pack, 4- 5oz portions of chicken, and 4- 4oz portions of your vegetables.
  4. Mix the correct portions of chicken and vegetables (aside from the cauliflower rice), their accompanying seasonings, and olive oil one at a time in a bowl.
  5. Place each medley onto a piece of foil, approximately 12 inches long.
  6. Fold up each side of the foil, and fold ends together in the middle.
  7. Place in oven on a baking sheet at 400 F for about 20 minutes, until chicken is cooked thoroughly
  8. Microwave Frozen riced cauliflower based on the instructions on the pack.
  9. When packs are complete, open pack carefully and put atop 2 oz servings of cooked cauliflower rice.
