- 4 oz. cubed chicken breasts
- 4 oz. pineapple chunks
- 4 oz. green and red peppers
- Yellow curry powder, to taste
- 1 TBSP. olive oil
- Soak wooden skewers in water overnight.
- Thread skewers with chicken, peppers and pineapple.
- Brush with olive oil and sprinkle with curry powder.
- Place in baking dish, cover with foil and bake at 350 F for 20 minutes, or cook on grill.
