Cilantro Lime Grouper

Packed with vitamins, minerals, and omega-3 fatty acids, white fish may help to protect against a range of diseases when consumed in proper and healthy amounts: from cancer, to heart disease, to depression, to arthritis. 

Compared to fish like salmon and anchovies that have a very strong (and what some consider unpleasant) taste, white fish are much milder. This makes them more palatable and also easier to dress up in a variety of flavors. White fish are great plain with a sprinkle of salt and pepper, blackened, topped with garlic butter, and a whole plethora of other ingredient combinations. Today, we’re sharing with you a grouper baked to flaky perfection topped with an herbaceous cilantro lime butter sauce! 

These flavors are fresh, fun, and energizing - something we could all use a little more of now and then, right? We think fresh ingredients make this dish what it is, but if you don’t have fresh herbs and limes on hand, you could certainly opt for dried and pre-packaged varieties, too! Grouper is our white fish of choice here - it’s in season and we’ve got plenty in our kitchen right now! But honestly, you could use any white fish that you love: tilapia, haddock, pollock, whiting, etc. Make it your own, and let us know what struck your fancy most.   • 4-6 oz.* grouper (or other whitefish)
  • 1 TBSP grass-fed butter
  • ½ TBSP fresh cilantro, chopped
  • Squeeze of lime juice
  • Pinch of: salt, pepper, nutmeg
  • 1/2 tsp lime zest, grated


  1. Preheat oven to 350 degrees F. Put the filets on a rimmed baking sheet sprayed lightly with cooking spray or lined with foil.
  2. In a saucepan over medium heat, melt the butter. Once the butter is melted, mix in the cilantro, lime juice, salt, pepper, and nutmeg.
  3. Pour over the grouper filet in the baking dish, and sprinkle the lime zest overtop.
  4. Bake for 12-15 minutes until cooked through (meat will reach about 145 degrees F and flake easily with a fork).
