Summer Fruit Parfait

Looking for a quick and easy breakfast?! Try this refreshing recipe! We've used blueberries and strawberries in ours, but any plan-friendly summer fruit is fine! The best part is this recipe travels very well - can be enjoyed at home or it can wait until you get to the office!

What You’ll Need:

  • 8 oz.  plain non-fat Greek yogurt
  • 1/2 C. Strawberries
  • 1/2 C. Blueberries
  • 1/8 tsp. lemon extract or fresh lemon zest 

How to Make: 

  1. In a bowl, mix yogurt and lemon extract or lemon zest until thoroughly combined.
  2. Fold into the mixture: strawberries and blueberries.

Servings: 2. Serving Size: ½ parfait mixture. Replaces: 1 fruit, 1 protein.

Yogurt Fruit Parfait

This has been one of the most positive experiences of my life! I've tried every fad diet that has come and gone over the years and ended up gaining all of the weight I lost...plus some more!
