Summer Fruit Parfait

The best part is this recipe travels very well - can be enjoyed at home or it can wait until you get to the office!

What You’ll Need:

  • 8 oz.  plain non-fat Greek yogurt
  • 1/2 C. Strawberries
  • 1/2 C. Blueberries
  • 1/8 tsp. lemon extract or fresh lemon zest 

How to Make: 

  1. In a bowl, mix yogurt and lemon extract or lemon zest until thoroughly combined.
  2. Fold into the mixture: strawberries and blueberries.

Servings: 2. Serving Size: ½ parfait mixture. Replaces: 1 fruit, 1 protein.
