Summer Fruit Parfait
Looking for a quick and easy breakfast?! Try this refreshing recipe! We've used blueberries and strawberries in ours, but any plan-friendly summer fruit is fine! The best part is this recipe travels very well - can be enjoyed at home or it can wait until you get to the office!
What You’ll Need:
- 8 oz. plain non-fat Greek yogurt
- 1/2 C. Strawberries
- 1/2 C. Blueberries
- 1/8 tsp. lemon extract or fresh lemon zest
How to Make:
- In a bowl, mix yogurt and lemon extract or lemon zest until thoroughly combined.
- Fold into the mixture: strawberries and blueberries.
Servings: 2. Serving Size: ½ parfait mixture. Replaces: 1 fruit, 1 protein.
