This recipe is easy to make and takes barely any prep. Instead of filling our breakfast casserole with sausage; we went with a lower sodium and lower fat option - ground turkey breast! Did you know, with the right seasoning, you can create the same taste of sausage without any of the excess calories?! Our recipe below shows you exactly how to perfectly mimic that savory sausage flavor!

Maybe you're not a fan of sausage, and you're looking for a change of flavor in your morning casserole? No problem - this recipe still fits the bill! You can choose to skip the McCormick's steak seasoning, don't worry, your casserole with still have a Southwest kick, but not as much of a sausage flavor, or you can just keep it simple with salt & pepper. Not only is this recipe versatile; it's easy and it keeps! If you're someone who doesn't have a whole lot of time for breakfast in the craziness of the morning, this recipe is perfect of you! It's your easy-to-prep and grab-and-go option for breakfast throughout the week. Make several servings at once, and keep enjoying it throughout the week. Did we mention you can eat it at breakfast, lunch, or dinner?! Talk about a "meal in minutes"! Pro tip: create individual servings by baking individual servings in muffin cups or small casserole dishes!

We've spent a little bit of time talking up how easy and simple this recipe is to make, but don't let the simplicity of this one fool you into thinking it's basic or bland. Aside from enjoying it to yourself or (maybe) sharing with your family, this casserole is one of those recipes that you can totally bring to a group breakfast or brunch. Between delicious bites, everyone will think you've spent hours perfecting a secret family recipe that's been handed down for generations! 



12 Egg whites

5 oz. cheese, shredded from a block

7 oz ground turkey breast

½ tomato, diced

½ green pepper, diced

Red pepper flakes, to taste

Chili powder, to taste

Italian seasoning, to taste

McCormick’s Montreal steak seasoning, to taste


Brown ground turkey breast with seasonings & crumble into small pieces. In a mixing bowl, stir in egg whites, cheese, tomato & pepper. Add the crumbled turkey breast; pour mixture into 8x8 pan sprayed pan. Bake at 375 F for 30 minutes, or until golden brown.

Servings: 6-8

Serving size: 1/8 casserole makes 1 serving

Replaces: 4 oz protein serving, 4 oz vegetables
