Southwest Breakfast Casserole

12 Egg whites
5 oz. cheese, shredded from a block
7 oz ground turkey breast
½ tomato, diced
½ green pepper, diced
Red pepper flakes, to taste
Chili powder, to taste
Italian seasoning, to taste
McCormick’s Montreal steak seasoning, to taste
Brown ground turkey breast with seasonings & crumble into small pieces. In a mixing bowl, stir in egg whites, cheese, tomato & pepper. Add the crumbled turkey breast; pour mixture into 8x8 pan sprayed pan. Bake at 375 F for 30 minutes, or until golden brown.
Serving size: 1/8 casserole makes 1 serving
Replaces: 4 oz protein serving, 4 oz vegetables
