INGREDIENTS

  • 1 slice low calorie bread, toasted
  • 4-6 oz. low-fat cottage cheese*
  • Salt, pepper, and seasonings to taste

INSTRUCTIONS

Toast bread in toaster, oven, or toaster oven to desired toasty-ness. Pile the cottage cheese on top and flatten slightly. Finish with any additional toppings, spices, and seasonings that you like!

Open Face Breakfast Sammy

  • 2-3 oz. low-fat cottage cheese
  • 1 egg
  • 75 calories of bacon
  • 1 oz. avocado, smashed
  • Dash of Everything Bagel spice

Greens & Things

  • 4-6 oz. low-fat cottage cheese
  • 2 oz. avocado, smashed
  • 2 oz. ripe tomatoes, sliced
  • Fresh or dried basil sprinkled on top

Two years ago I had gotten to the heaviest I've ever been at 286. I was pre-diabetic and had high blood pressure.
