Breakfast can easily get lost in the morning madness. The Team in the MRC Kitchen created a healthy, protein packed recipe with just 5 easy ingredients.  Jumpstart the morning for your entire family!

Avocado, Spinach, and Cheddar Scramble

INGREDIENTS:

  • 8oz baby spinach
  • 2 eggs, beaten
  • 2oz avocado
  • 2oz cheddar

INSTRUCTIONS:

  1. Heat skillet over medium heat, spray with cooking spray.
  2. Add the spinach and sauté until wilted, about 3- 5 minutes.
  3. Pour in the eggs and scramble until done.
  4. Remove from heat and stir in the avocado and cheddar cheese.
  5. To spice it up add some jalapeños.

Serving: 1 | Replace: 1 protein, 1 veggie, 1 healthy fat
