Avocado, Spinach, and Cheddar Scramble
8oz baby spinach
2 eggs, beaten
Heat skillet over medium heat, spray with cooking spray. Add the spinach and sauté until wilted, about 3- 5 minutes. Pour in the eggs and scramble until done. Remove from heat and stir in the avocado and cheddar cheese. To spice it up add some jalapeños.
Serving: 1 | Replace: 1 protein, 1 veggie, 1 healthy fat
