Avocado, Spinach, and Cheddar Scramble
INGREDIENTS:
- 4 oz. baby spinach
- 1 egg, beaten
- 2 oz. avocado
- 1 oz. cheddar
INSTRUCTIONS:
- Heat skillet over medium heat, spray with cooking spray.
- Add the spinach and sauté until wilted, about 3- 5 minutes.
- Pour in the eggs and scramble until done.
- Remove from heat and stir in the avocado and cheddar cheese.
- To spice it up add some jalapeños.
Serving: 1 | Replace: 1 protein, 1/2 vegetable serving from lunch, 1 healthy fat
