Boneless Buffalo Bites

Ingredients For 1 Serving:

  • 5 oz. chicken breast, cut into bite size pieces (7 oz on More Level 1 Menu)
  • 50 calories of Saltines, Melba Rounds, or other plain cracker, crushed
  • Hot Sauce Marinade:
  • 1 Tbsp. Dijon Mustard
  • 1 Tbsp. Frank’s Hot Wing Sauce
  • 1 Tbsp. Water

Ingredients For 4 Servings:

  • 20 oz. chicken breast, cut into bite size pieces (28 oz on More Level 1 Menu)
  • 200 calories of Saltines, Melba Rounds, or other plain cracker, crushed
  • Hot Sauce Marinade:
  • 4 Tbsp. Dijon Mustard
  • 4 Tbsp. Frank’s Hot Wing Sauce
  • 4 Tbsp. Water

Preparation:

  1. Coat chicken pieces with hot sauce marinade.
  2. Cover with crushed crackers; bake at 350 F on a cookie sheet sprayed with cooking spray, 10 minutes or until done.

Air Fryer Option: these chicken bites cook perfectly in an air fryer. Cook at 400 F for 8-12 minutes. 

Tip: Great to dip in MRC Ranch Dressing (cookbook pg. 41) and serve with celery sticks.

1 Serving Replaces: 4 oz protein, 1 serving starch

MRC Clients - Most of your menus suggest weighing your protein portion after cooking. In this case, that is not possible, so we've added 1 oz to each serving because we know that chicken reduces by 1 oz while cooking. For example, 1 serving of chicken is measured at 5 oz raw, it will be approximately 4 oz after cooked.
