Baked Parmesan Tomatoes

Simple just went beyond ridiculous!  These beautiful, tasty, and super quick to make Baked Parmesan Tomatoes are the perfect appetizer or even a complete meal.  Whether you’re chillin’ and grillin’ outdoors or staying in, these little delights provide BIG TASTE! We “double dog dare” you to close your eyes, savour one of these, and then tell us you didn’t believe you were eating a mini sized pizza!  Unbelievably good!

  

Baked Parmesan Tomatoes

Ingredients:

  • 2 oz Parmesan cheese, shaved
  • 2 oz Mozzarella cheese, shredded
  • 16 oz ripe tomatoes (2 to 3 small to medium sized), any variety
  • ¼ C. fresh chopped basil
  • Minced garlic (optional)

Instructions:

  1. Preheat oven to 400° F.
  2. Using a food scale, weigh out 16 oz. of tomatoes and slice tomatoes into thick slices. Note: for small tomatoes, you can just cut them in half if preferred.
  3. Arrange tomato slices on a parchment lined baking sheet, and set aside.
  4. In a bowl, combine all cheese and garlic.
  5. Divide the cheese and garlic mixture evenly over the top of each slice.
  6. Bake for 8-10 minutes in a preheated oven until the cheese is melted and bubbly.
  7. Remove from the oven, and top each slice with freshly chopped basil. Note: you can also add Oregano to really amp up the “pizza” flavor
  8. Serve while still hot, and enjoy!

Servings: 2 | One Serving: 8 oz. of tomato slices (or ½ of recipe) | Replaces: 1 Vegetable, 1 Protein
