Our apple celery salad makes the perfect side to any holiday meal! Add this to your Thanksgiving table for a pop of bright color. It's sweet and crunchy with a hint of cinnamon. What's not to love? Something about apples and cinnamon together just creates the perfect dessert flavor. This recipe makes 1 serving, but we love to make extra and use it in chicken and tuna salad, or tossed in a green salad to add a sweet crunch. Even if it's not a holiday, this is a great side dish at outdoor parties and BBQs. It contains no egg and no mayo, so it stays fresher longer! 

 

  • 8 oz. chopped celery
  • 1 sm. apple, chopped
  • 1 Tbsp. canola oil
  • 1-2 pkg. zero calorie sweetener
  • Dash of poppy seeds
  • Cinnamon to taste (optional)

 

In a bowl with a tight fitting lid or zipper bag, combine apples and celery, pour in oil. Seal and shake. Add sweetener, poppy seeds, and cinnamon. Shake once more.

 

Makes one serving | Replaces: 1 vegetable, 1 starch, 1 healthy fat
