
Buffalo Chicken Dip

Is there anything better than creamy, spicy, healthy buffalo chicken dip? We are going to go out on a limb here and say "absolutely not." This recipe takes the classic appetizer and makes it into a delicious low-fat alternative!
Our Buffalo Chicken dip is a client favorite! And soon to be yours too! The recipe makes for a super easy meal prep, with only five ingredients, and it’ll take no time to whip up! One serving of this tasty dip can be used as your full protein serving. Just think, you can heat up your dip at lunch and serve with 8 oz. of your favorite raw veggies for dipping - we love celery, cucumbers, and tomatoes with this one!

This is also the perfect recipe to bring to every football tailgate, dinner party, or holiday function! When you make this dip and bring it with you, you can confidently attend any outting knowing that there's something totally delicious on the table that you can fill up on guilt-free. And no one will have a clue that your yummy appetizer is program-friendly!
Heat not entirely your thing? That’s okay! You control the level of heat this recipe brings. Simply use less Franks Buffalo Sauce if you prefer less spice by mixing in less to start and slowly adding more until you've reached your desired level of spice.
Ingredients:
- 16-24 oz. low fat cottage cheese*
- 1 pkg ranch dressing (dry)
- ¼ c. Frank’s Wing Sauce
- 8-12 oz. chicken breast, shredded*
- 4-6 oz. Parmesan cheese, grated*
*MRC Clients: refer to your menu for exact protein portion sizes. This recipes uses 4 servings cottage cheese, 2 servings chicken breast, and 2 servings hard cheese.
Instructions:
- Preheat oven to 350 degrees F and lightly grease a 13x9 baking dish.
- Blend the cottage cheese in a blender or food processor until smooth.
- Add to the bowl: chicken, ranch seasoning, and wing sauce. Blend again. For dip with a little more texture, only put 1/2 of the chicken breast into the blender and reserve the other half.
- If you reserved half of the chicken breast, mix this into your dip by hand now, and then pour the mixture into your baking dish. Sprinkle the grated cheese on top and bake for 20-25 minutes, until heated through and beginning to brown on top.
