Zucchini Noodles with Lemon-Basil Cream SauceA big challenge when it comes to healthy eating is finding a healthy option or substitute for pasta.  See, I love pasta, but let's just say pasta does not love me the same. It seems like if I even look at a plate of spaghetti, then I gain weight.  I’m sure many of you know this same feeling all too well.


Here is the perfect recipe solution that will change the way you think about “pasta” forever.  After purchasing a spiral slicer, I began making Zucchini Noodles.  I instantly fell in love, and soon this became a dish I now make 2-3 times a week.  I had request after request from friends and family asking me to teach them how to make this. I mean, what's not to love? GREAT flavor at less than 1/4th the calories of traditional pasta.  This recipe is a great way to enjoy Zucchini Noodles with one of my favorite healthy fat cream sauces.  I hope you love these noodles as much as I do!


  • 24 oz. Zucchini, spiralized
  • Cooking Spray
  • 6 oz. avocado
  • 1 clove garlic, finely chopped
  • 1 Tbsp Fresh Squeezed Lemon Juice
  • 8 Fresh Basil Leaves
  • 1/8 tsp fresh ground pepper
  • Sea Salt, Dash
  • 1 tsp. Mrs. Dash Garlic and Herb
  1. Wash zucchini and cut off any visible stem.  Using vegetable slicer of choice (Spiral or Julienne) slice zucchini into long spaghetti-like strands. 
  2. If using a spiral slicer, on a cutting board, cut strands into three smaller sections using your kitchen knife.  Set “noodles” aside.
  3. Remove pit from avocado and spoon avocado into food processor.  Add garlic, lemon juice, basil, pepper and a dash of sea salt.  Blend until a smooth creamy paste consistency. 
  4. Spray non-stick skillet with cooking spray and place over medium heat.  Add zucchini noodles and cook for 2-3 minutes.
  5. Add Mrs. Dash to noodles and cook an additional 2-3 minutes until noodles begin to cook but still have some firmness to them.  Remove from heat
  6. Combine noodles with avocado paste, mixing until noodles are well coated.
  7. Enjoy!  This dish goes great with shrimp or chicken!


Makes 3 servings | Serving size: 1/3 noodles mixed with 1/3 avocado cream sauce | Replaces: 8 oz. vegetables; 1 healthy fat
