Cauliflower Substitute for Mac-n-Cheese

While carbohydrates are an important component of a healthy diet, too many carbs can spell disaster for your weight loss plans. Limiting carbohydrate intake can help speed weight loss and it can be done without feeling deprived. Cauliflower makes an excellent substitute for many carb-heavy ingredients in your favorite meals.

Cauliflower: A Delicious Low-Carb Substitute

  1. Make a silky sauce. You might think that you need flour to make a beautiful sauce, but if you use it correctly, cauliflower can be an excellent substitute. Chop, boil, and puree the cauliflower to make a light sauce for pasta or serve over a lean protein like fish or chicken. Cauliflower can easily take on the flavor of your favorite spice like a fragrant curry or garlic.
  2. Make a handcrafted pizza crust. Artisanal pizzas are all the rage, but the high carbohydrate count of the crust makes them a diet no-no. Luckily, you can use cooked cauliflower along with egg, spices, and seasonings to create a crispy, low-carb crust. Top with additional veggies to make a healthy entree.
  3. Rice your cauliflower. You can use a cheese grater or food processor to mince cauliflower florets into rice-sized pieces. From there you can use it just as you would regular rice. It makes a great side dish for a hearty meal or can be used in a stir fry dish where it soaks up the flavor of soy or fish sauce effortlessly.
  4. Roast cauliflower for a salty snack. Sometimes you just want something salty. Before you reach for the chips, try roasted cauliflower. Chop into small florets, toss with olive oil and some sea salt, and roast in a hot oven until done.

As you can see, cauliflower is a versatile vegetable that can help you reduce the carbohydrates in your diet without wrecking your meal plan.

After I reach my weight goal, I plan to remain in good health with my new found healthy way of eating the calories I need to maintain my proper weight. My Dr. is very pleased at my progress. She wondered how I have lost 30 pounds.
