Don't Overlook the Benefits of Bok Choy

While all vegetables are packed with important nutrients, one vegetable that is worthy of special mention is bok choy. This vegetable looks like it belongs in the dark green leafy vegetable family but is in fact a type of cabbage. It can be found for sale fresh or frozen at local grocery stores; alternatively, you can buy it freshly picked at many local farmer's markets.

Bok choy has unique compounds that can reduce the risk of various types of cancer. One cup of this vegetable contains all the vitamin A you need for the day, well over 30% of the daily recommended intake for vitamin C and literally dozens of important antioxidants. It also contains folate, protein and calcium. Additionally, bok choy has no fat content and very few calories, making it an ideal dish for people who want to lose weight.

Bok choy has a mild, almost sweet flavor and can easily be added to soups, stir-fried foods and other savory dishes. It can be mixed with other vegetables, chicken or beef. However, it is very important not to overcook it. Cook it only until it changes color and then take it out of the pan to either serve on its own or mix with other dishes. Alternatively, you can make your own green smoothies using bok choy together with one or more fruits.

While there is no single magic fruit or vegetable that will enable you to immediately lose weight, fruits and vegetables do have important nutrients that will enable you to not only slim down but also keep those unwanted pounds off permanently. If you aren't familiar with bok choy, consider adding small quantities of it to one or more dishes. It is surprisingly tasty and packs a nutritious punch you won't want to miss out on.
